Dining at Hermitage
From Flowers to Candles — Breakfast to Dinner
Cooking rooted in Nevis, made for flavour, with old recipes, island techniques and classical influences gathered along the way — served every evening at the Great House.

A Table at the Heart of Hermitage
The restaurant sits at the centre of Hermitage life, but it has never been only for hotel guests. People come up the hill from around Nevis to join us for breakfast, lunch or dinner, for a family gathering, to mark a special moment, or simply because they feel like eating well.
Most meals are served on the Great House dining verandah, with tables sometimes spilling into the garden when the occasion calls for it. Resident guests and island visitors eat side by side; friends are made and stories are shared.
About once a month, we welcome the island with an afternoon Garden Party — a country-style buffet with roasted meats and island specialties. It can be an eclectic affair, casual and elegant at the same time: ladies in hats, gentlemen in sandals, everyone as they are most comfortable.
The Restaurant
Meals are usually served on the Great House dining verandah, under the high timber ceiling and open to the gardens. Breakfast, lunch and dinner are prepared fresh each day, with menus changing according to what is available and what the kitchen is cooking.
The bar is a place to stop for refreshment through the course of the day. We think we serve the best rum punch on the island; come and try it, then tell us if you agree.
Reservations are recommended, and the kitchen is happy to work around dietary needs when we know about them in advance. If you are staying elsewhere on Nevis, you are just as welcome to join us. Call, WhatsApp or send us a message and we’ll help with meal times and reservations.

Wednesday Pig Roast
A Feast the Island Knows
Wednesday night is the Pig Roast — a whole roast pig at the centre of a generous Caribbean buffet, with island sides and salads served in traditional Nevisian clay pots. Over the years it has become one of the things that sets Hermitage apart: relaxed, sociable, generous, and known well beyond the hotel itself. It brings guests not just from all around Nevis, but from St Kitts as well; reservations are a must.

Friday evening
Friday Evenings at Hermitage
By late afternoon, the east garden porch begins to fill. A few regulars arrive early, chairs are pulled together, newcomers are invited in, and kerosene lanterns are set on the wrought-iron tables across the lawn. The wood-burning stone oven is lit for flatbreads and pizzas, and the kitchen leans a little more toward its Italian side. The evening is driven as much by the conversations as by the menu.

The Evenings Sparkle
Throughout the week, Hermitage settles into a softer rhythm after dark — candles on the tables, fairy lights in the garden, the Great House glowing from within. Some evenings are lively, full of conversation; others are quiet enough that you may feel you have the house almost to yourself.
Dinner is served by candlelight every night. The menu changes, but the care does not — local fish and vegetables, grilled meats, pasta, island favourites and old recipes, prepared for whoever is at the table that evening.
Long before the first guest sits down, glasses are polished, flatware set, linen napkins pressed and folded by hand — the kind of care that shows up quietly, in a gracious welcome and attentive service that carries through the evening.
